Quesabirria

Birria is braised cow meat that's been pan-fried in fat. The birria quesadilla has birria meat, Mozzarella cheese, cilantro, lime juice, and onions stuffed within a folded tortilla. A small bowl of consomé (soup) is served on the side for dipping.
